In 2006, Chef Jeff found himself with the opportunity to open his own restaurant after leading kitchen brigades his entire life. He immediately started thinking about what comfort food his small suburban town was missing: TexMex. Cheff Jeff had spent much of his childhood in Austin, Texas, and armed with his recollections of hot summer days punctuated with trips to Lady Bird Lake, sunset BBQ’s, and more TexMex food than he knew what to do with. A Queso the Mondays was born from these memories: a focus on gooey queso, freshly-fried tortilla chips, and all the toppings you could possibly imagine.
