Chef Sam Rossi conceived of The Pesto’s Yet to Come (TPYTC) as a platform to combine his love for his Italian heritage with his experience in Michelin starred kitchens. In 2023, he opened TPYTC with the goal of bringing Michelin-level creativity and service to his hometown of Detroit. Working with local urban farmers – a rising cause in his city – he developed an inspired tasting menu, drawing inspiration from multi-course Sunday dinners with his family. Rossi’s vision was to create a restaurant combining the old and the new. He utilized retro design elements and traditional Italian Sunday dinner courses and contrasted them with modern gastronomy techniques and ingredients, allowing familiar flavors to shine with a novel and surprising execution.
